Table turn

The period from seating one party until a table is ready for the next reservation.

Realistic turn times help a venue expose availability without creating impossible overlaps. They vary by service, party size and experience, so a single fixed duration rarely represents every table accurately.

In practice

If a party sits at 19:00, leaves at 20:35 and the table is reset by 20:45, the operational table turn is one hour and 45 minutes.
