Capacity management

The process of controlling how many guests, tables, seats or bookable assets can be accepted for each period.

How capacity management affects a service

Capacity is constrained by more than physical seats: kitchen output, staffing, arrival pacing and zone availability also matter. Good rules expose sellable inventory without overwhelming the operation.

In practice

A 70-seat restaurant may limit a 19:30 arrival slot to 24 covers because the kitchen cannot receive all 70 guests at once.
